1. I forgot to order a cake and now it is sold out for the week. Can you make one more for me? It’s not that simple for us. We are limited by the number of cake moulds and our fridge space. Items are sold out because we have physical limitations on what we can make. Please order early to avoid disappointment.

2. Do you make custom cakes? No we do not. Custom cakes are a different discipline in baking and it takes different equipment to execute well. We are a pastry shop that specializes in French pastry techniques; custom cakes are not a part of what we do.

3. Can I order *insert dessert here* that I saw awhile back on your Instagram/website? It depends. We are a seasonal dessert shop and we change our products based on the availability of products. Our goal is always to make desserts using the best possible ingredients available. We want the desserts that you eat to be some of the best that you have ever tasted. Often, this means eating them while ingredients are at their peak. For example, we only offer our Fraisier (strawberry shortcake) during the 4 weeks of the year when Ontario field strawberries are available at the market.

4. Why don’t you offer more gluten-free/dairy-free/sugar-free desserts? We are not familiar with the assortment of alternative for flour, dairy or sugar that is on the market. Our recipes are tested-extensively and baking is tricky: you cannot simply substitute cane sugar for xylitol and expect the same result. We stick to what we know, as developing a new set of alternative recipes is time-consuming and costly.

5. Why are you always sold out of *insert dessert here*? We are a small shop with limitations on labour and storage space. We are also popular for our desserts. We do our best to stock as many desserts as we can, but we always recommend for you to come as early as possible to avoid disappointment.

6. Can you make a dessert less sweet? Our desserts are known to be well-balanced and not overly-sweet. We cannot adjust the sweetness level on our cakes, as the sweetness comes naturally from our chocolate, rather than the addition of cane sugar.
